I am a 51 year old woman. Who was born in St. Lucia W.I. and was raised in St. Croix, U.S Virgin Islands. At the young age of 9, I moved in with my Uncle Ben who was born in Curacao and my Auntie Paulie who was born in Trinidad W.I. They owned a restaurant called Mid Island Bar & Restaurant where I worked after school doing different chores. It was not always fun and some days I would of rather be anywhere else but there. Yet there was one chore I did love, which was when my Auntie Paulie would call me into the kitchen to assist her in cooking.
My fondest memory of being in the kitchen with my Auntie Paulie was cutting up the onions, sweet peppers & thyme among other seasonings, then helping her to mix it into the pot. I remember how the savory aroma pulled my Uncle Ben into the kitchen by the hand, only for him to be sent right back out by my Aunt, along with his sticky fingers. Then on the weekends it was my duty to prepare meals for our family of 13.
I became quite skilled in the kitchen during the time I lived there. I even started to make different drinks like Irish Moss, Mauby, Sorrell, Peanut Punch & Ginger Beer. Especially because of Sundays, a very special day in our home. We ate grand! From Saturday morning my Auntie Paulie and I were preparing for Sunday dinner. We would go to the market to get fresh chicken, fish, beef, vegetables, etc. It was not easy being so young and being held liable if everything did not turn out perfect. I received many pot spoons and beatings for meals that did not come out the way she wanted them to. I even burned the chicken a couple times as pay back because my cousins were busy being children while I was the red- head step child literally. Yet now I can look and see the silver linings in the clouds and be grateful because it made me the woman I am today. Praise be to God all is forgiven and I am grateful!
Sitting back and watching everyone enjoy their meals as they laughed, smiled and shared stories around the table brought joy to my heart to know that life still had peace and happiness. I learned that a good home cooked meal can bring people together no matter the circumstances or present issues. Food is a universal language that everyone loves. All my dishes are cooked with love, Caribbean spices & flavor. I always dreamed of owning a restaurant one day and now by the grace of God it has become my reality! Throughout my life I have watched people spend hundreds of dollars including myself on food that was not worth its set price and not even delicious at that. At Louison Cuisine your hard earned money will never go to waste! You will always leave full, with an extra plate to go, and a smile.
My goal is to give people throughout New York City a place where they can come away from home, not only to eat food, but to enjoy delectable dishes that hold flavor in every bite you take. A place to bring your spouse, family and friends to relax and spend time together. Then one day a place that will expand past New York City so everybody everywhere can have a Louison Cuisine experience where every day is like Sunday dinner.
